Blueberry Mango Smoothie

I love this because its sooo quick, easy, and healthy for you. I get so busy in the morning getting ready for work that I rarely eat breakfast but now that I have to take pills in the morning I get really sick if I dont eat something so this is great to whip up real fast and take to work. I wanted to do blackberries but they are so expensive and I couldnt find fresh ones at my grocery store so i figured i would use blueberries instead. I must say I really liked it. Its a bit tart but I like drinks like that so if you dont like tart things then I would add another fruit rather than blueberries. Hope you enjoy this drink and if you make it please comment below and tell me what you think :)
Ingredients:
1 cup of blueberries
1 cup of Mangos
1 cup non-fat yogurt
1 cup crushed ice

Combine in blender and blend until smooth.

It's that easy!

Chocolate Peanut Butter Coffee Shake!!

Sounds like a lot but I bet you'll love it! First off let me just apologize about the picture. I was in such a rush for work so I didnt take good pictures of this drink.

I love to make different drinks and I always try to come up with different recipes and they never turn out like I want them to, but this was everything and more!!!! By far the best drink recipe I have ever made. A little bit high in carbs but its well worth it.

INGREDIENTS

1/4 C Coffee (Already Brewed)

1 C Crushed Ice

1/4 - 1/2 C (Depends on how rich you want it) Chocolate Syrup

1/4 C Peanut Butter

1/2 C Vanilla Ice Cream


DIRECTIONS

Blend all ingredients together until smooth.

Best Crockpot Pulled Pork



I'm going to be honest... I was sooo scared to make this because I didnt think it was going to turn out good AT ALL! I wouldnt even taste it at first, I made my Husband do it. Haha! Boy, was I wrong. It came out so good. It was so moist and very tasty. I'm definately making this again. If you didnt know already, i'm from Kansas City and KC is known for their BBQ so my family eats it a lot and they know whats good. If they loved it I know this recipe is something to brag about.

Ingredients

1/2 onion, chopped

6 garlic cloves, peeled

2 jalapeno pepper, seeded and chopped (My grocery store was out so I bought a can of already chopped up jalapenos and used those)

4 teaspoons of chile powder

2 tablespoon tomato paste

4 tablespoons of dijon mustard

1 1/4 cup distilled white vinegar

2 teaspoons paprika

2/3 cup ketchup

4 teaspoons worcestershire sauce

1/2 cup brown sugar

1 bay leaf

pinch of salt

6 lbs of pork butt shoulder roast, trimmed of excess fat

Hamburger buns

BBQ Sauce

Directions

Puree all of the ingredients (except the bay leaf, vinegar, pork, and buns) in a blender until smooth. If you want you can marinate the pork in the sauce overnight before cooking.

Put sauce, bay leaf, vinegar, and pork into crockpot and add 1 quart of water. Cook appox for 8-10 hours. For the first 2 hours cook on high. You will know its done when it easily pulls apart with a fork. Drain all the sauce out (including the bay leaf) and pull pork apart with fork. Lastly add your favorite BBQ sauce and ENJOY!!!

Cupcake Cookies



I made them this way because I was impatient LOL! I was craving chocolate chip cookies but I didnt want to put the cookie dough in the refrigerator to let them harden then roll them into balls so I put them in cupcake liners. I actually liked it better like that.

Ingredients

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, melted

1 cup packed brown sugar

1/2 cup white sugar

1 tablespoon vanilla extract

1 egg

1 egg yolk

2 cups chocolate chips

Directions

Prehead oven to 325 degrees F. Line cupcake pan with liners.

Sift together the flour, baking soda and salt; set aside

In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon.

Spoon into cupcake liners. Bake until golden brown or inserted toothpick comes out clean. Transfer to wire rack to cool.

Mexican Lasagna

One word... DELICIOUS!!! My husband absolutely loves this. I always make a big casserol dish of this stuff and it's seriously gone in a day. I found this recipe on the internet but it had like half of the ingredients I put in it. You can really add just about anything in here and it would more than likely turn out good. So let me how you like this if you try it... which you should try this!!

Ingredients


2 lbs Ground Beef


1/2 Onion, Chopped or season with Onion powder or minced onion


5 C Salsa (I sometimes substitute 2 cups of the salsa with 2 cans on rotel)


2 cans (15 oz) Black Beans, rinsed and drained


1/2 C Italian salad dressing


1 pkg Taco Seasoning


1/2 tsp ground cumin


1 pkg (8-10) flour tortillas


1 can of corn or about 1 C of frozen corn


1 1/2 C sour cream


4 C Shredded Mexican Cheese blend


2 C Shredded Lettuce


1 Can Green Chilis


2 small cans of sliced Black Olives




Directions






  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.




  • Stir in the rest of the ingredients one at a time except for the lettuce & tortillas.




  • Spoon a generous layer of mixture on bottom of casserol dish. Sprinkle with grated cheese.




  • Place a couple of flour tortillas on top of mixture. Layer with half of the mixture and cheese. Repeat as many layers as you like.




  • The last and final layer should be a healthy does of grated cheese.




  • Cover with foil that has been sprayed with pam




  • Bake at 400 Degrees for 25 mins




  • Let stand for 5 mins before topping with lettuce.

Chocolate Chip Cheesecake Dip

This was so good that I couldn't stop eating it. The only thing I would of done different would be to use mini chocolate chips instead of the regular sized ones and also I would of doubled the recipe if I was making this for a party or having guest over.

Ingredients


1 pkg (8 oz) cream cheese, softened


1/2 C butter, softened


3/4 C confectioners sugar


2 Tbs brown Sugar


1 tsp vanilla extract


1 C (6 oz) mini chocolate chips


Graham Crackers




Directions


In a small bowl, beat cream cheese & butter until light and fluffy. Add the sugars & vanilla; beat until smooth. Stir in chocolate chips. Serve with graham crackers




It's that EASY!!!

Cream Cheese Oreo Balls

These are so simple and easy to make. Great to make for Christmas because they make a lot and very rich in flavour.I hope you all in enjoy and if you try them out let me know how you liked them!





What you need:

8 oz pkg cream cheese

Pkg oreos

White Chocolate Bark



Directions:

In a medium size bowl microwave cream cheese just until softened. Crush up oreos either in plastic bag or blender, then add with cream cheese and blend with mix master until smooth. Roll mixture into balls, put them on a cookie sheet, and refrigerate balls for about 1 hour. Melt white chocolate in microwave for 1 minute and stir. Microwave for additional 30 seconds (stirring in between) until its melted smooth. Dip oreo balls into chocolate and WHA LA there you have your yummy oreo balls!

ENJOY!!!



**You can refrigerate oreo balls after your finished coating them.

** You can also add mint extract if you like.

** Add green or red food coloring to white chocolate to make it more festive.

** If you don't like white chocolate substitute it for milk chocolate or vanilla chips/bark.
** Drizzle chocolate icing on top to make more fancy.

White Chicken Chili

This is pefect for a cold fall/winter day. I usually start making it around noon and let it sit all day so the flavours are really strong, and the chicken is tender and juicy. Please leave a comment and let me know how you like it or if you added anything different.



3 lbs chicken breast

8 cans northern beans

1 can rotel

2 (64oz) can chicken broth

1 can corn

3 pkgs white chicken chili seasoning



Cook chicken in large skillet (I use 1 pkg of chili seasoning and cook it with the chicken to flavour it better)meanwhile in large cooking pot add drained corn, beans (you can drain the beans if you want. If you don't your chili will be thicker.), rotel, chicken broth, and chili seasoning. When chicken is done add that into the cooking pot. Stir occasionally. Cook until heated.
ENJOY!!!

**This makes A LOT!! You will definitely have left overs. If you don't eat a lot i would suggest cutting the recipe in half.


Fudge Cake!!

2 years ago when I was planning my wedding, I went to a bridal show and fell in love with this cake that tasted almost exactly like fudge so I've been trying to find recipes for it and I finally found one and made it and it turned out amazing! If you're a chocolate lover, you will LOVE this!! Its very rich and also very moist! Hope you guys give it a try and let me know how you like it!







350grams Chocolate chips
2 1/4 sticks of butter
2 cups Water
2 cups of Caster (Superfine) Sugar (If you can't find caster sugar, just use regular sugar and put it in the blender).
2 cups of Self-Raising Flour
4 eggs
You will need a round bundt cake pan. (You can use just a round cake pan or square just make sure its deep)


Preheat your oven to 325 degrees
Gather the chocolates, butter and water and put it in a medium size saucepan. Stir frequently over low heat until all chocolates and butter are melted and looking very smooth. Set aside to cool.
Lightly beat eggs in a large bowl. Slowly pour the chocolate mixture into the eggs.
Add sugar and flour into the chocolate mixture, and continue mixing until well-blended.
Make sure to use baking paper (wax paper) so that it won't stick on the bottom and sides of your pan. (I used a silicon pan so I wouldn't have to use wax paper. See pic. below)







Bake for about 1 hour or until a skewer inserted into the center of cake comes out clean.
Let the cake cool, before adding the frosting.



Chocolate frosting
300 grams Chocolate chips
2 tablespoon butter
1/2 cup heavy cream
Melt chocolate chips, butter and heavy cream over low heat, make sure to stir frequently until melted and very smooth. You can add more cream if you think the mixture is too thick.
ENJOY!!!


**This cake can be frozen for 4-6months.


** You can also make this cake with different flavours, just substitute the chocolate chips with chips of your choice.





Suggestions- After your frost the cake, I set it in the frig. for a few hours. If you eat it when its still warm its kind of gooey, which I didn't like. When its cold it seems to harden to the right consistency its suppose to be.
